Cooking & Baking

Continuing my way through the favourite vegetarian cookbook, finding some other interesting recipes along the way and experimenting a bit on my own - here are some of the things that has been cooked on my stove and baked in my oven lately;

Red - green lentils with red onion and coconut served with herb/garlic marinated quorn filets. It would have been excellent if it hadn't been for the lentil cooking instructions, which called for far longer time than needed, hence making the lentils a bit porridge-like. Otherwise it was brimming with flavours and textures - will definitely make again, though cooking the lentils less...

Yet another version of one of my favourite and simple dishes, pastasalad with grilled halloumi. This was the first time I made it with creste pasta, and it was really nice, pleasing to the eye as well as tasty.

So very simple to make, and easy to diversify with different veggies - creamy courgette, carrot, mushroom gratin served with spaghetti. Very tasty, might have something to with the massive amount of garlic... Will make again, for sure!

Potatoe-carrot pancakes - rårakor in Swedish - and cottage cheese with herbs. Fresh, few ingredients, easy to make, perhaps not a new favorite of mine, but quite alright.
For dessert, or perhaps more of something to accompany the afternoon fika;

Really tasty raspberry & cardamom buncake - which also can be made into separate buns of course. Freeze well, perfect for unexpected guests - if you like those... - will sooo make again.

My two favourite fruits, raspberry & pineapple pie with almonds, didn't really match well like this. Next time I will use other fruits when making this kind of pie. Made a pretty picture though!

Easy to make, absolutely delicious, succulent banana-chocolate cake. Oh my, such a keeper!
