7 large paprikas/peppers (red/orange/yellow)
5-8 shallots
2 dl creme fraiche
1 l vegetable boullion
sunfloweroil
thyme, salt & pepper
Slice and dice the paprikas and the shallots, but them in a food-processor and mix. I like to keep the mixture a bit chunky.
Put som sunfloweroil in a saucepan, fry the paprika/shallot mix a bit. Add the vegetable boullion and creme fraiche. Spice it up and let it simmer for a while.
Enjoy with a nice eggsandwich or why not a cheezier kind of sandwich!
Delicious, really delicious!! I've been looking for a paprika soup recipe for longer time, and well, now I found a great one!:)
