happy carrot day 2015
In celebration of this awesome root veggie - ie the best veggie on the planet! According to someone with the carrot defect - with its very own day today, International Carrot Day April 4, we had carrot pasta gratin for dinner. Lovely as usual. When I originally made it - recipe here - it was vegetarian, since then Oatly iMat fraiche has entered the world and you do not have to rely on dairy anymore. Thank goodness.
And I'm sure even if you can't find Oatly products in your food store there are other excellent non-dairy options.
