500 g cauliflower
2 carrots
2 vegetarian stock cubes
8 dl water
2 dl milk
1 dl creme fraiche
salt, black pepper
Rinse, peel, dice and slice the cauliflower and carrots - since you're going to use the amazing tool of a handmixer the dice and slice bit isn't too particular - put them in a pot with water, veggie stock cubes and milk, let it boil for about 20 minutes. Then let the handmixer work its magic turning the boiled stuff into creamy delight, add creme fraiche, salt and black pepper. Voilá, a delicious, quick soup for chilly autumn evenings! If you don't like your soup quite as creamy and thick, add some more water.
For me it was love at first spoon, I actually had this soup both yesterday and the day before that, seriously contemplating having it again this evening or possibly tomorrow instead. Don't feel very inclined to cook, want insant gratification for a weekend I plan to spend basically in position horizontal enjoying reading one of my latest literary finds, trying to keep from thinking too much, "The Uncommon Reader" by Alan Bennett.
A novella which has made me smile in delight from page one and laugh out load several times while reading. I suppose I should also make an effort in finishing some of the older currently reading books too, sigh... But look--->, there are only seven of them now, that is true progress...!
